Instructions
For the Cordial: Combine all the components in a saucepan, bring to a gentle boil, agitating so the sugar melts. Next, turn off the heat and let it to cool down entirely. Pour to a sterilised bottle, cap it and store chilled, it can be stored for around one month.
To make Premix: Pour all the spirits and syrup into a big jug, leave to sit for 60 minutes, then pass it through preferably using cheesecloth, so it's perfectly clear.
When ready to serve: Measure 85ml of your premix into a stirring glass packed with ice, and stir gently for about 60 seconds to chill. Filter into a frosted cocktail glass or similar, top with a few cranberries and finish with a light spray with the mandarin essence over the drink.
